OLIVE PECAN PASTRY ROLL
60 g butter, at room temperature
100 ml vegetable oil (1/2 cup)
100 ml yogurt (1/2 cup )
10 g baking powder (1 package)*
2 eggs(one yolk separate)
A big pinch of salt
350-400 gr of flour (about 3-3.5 cups more if needed)
150 GR core extracted olive (1.5-2 cups)up to
70-80 g walnuts, chopped coarse (up to 3/4 cup)
5 g dried thyme (or 1 tablespoon)
Olive oil 30 ml (2 tablespoons)
*I used a spoon until the pulp by adding baking soda or flavored dough mahaleb mahlepli a click you can move on 🙂
Mix liquid ingredients except the flour, add other ingredients.Add flour little by little,it will not be a soft dough and it will stick. Divide dough in half. About 15 to 20 cm thick until it is a rectangle with half a finger open.
Olive chunky chop the walnuts and add thyme, stir. This pour it into half a roll of the mortar. Drizzle with half of the olive oil. Roll from the long edge and 2 cm slice about the thickness of two fingers. Other follow the same procedure for the remaining dough.
